Clever Kitchen: Spiced Pumpkin Bread

This is one of the easiest and tastiest breads that you will (ever) make – Spiced Pumpkin Bread!  It is inspired by a recipe found in Cooking Light. It is perfect for the holidays and goes well as an after-dinner dessert or an early morning breakfast (or anytime in-between).  Thankfully, it makes 2 loaves – perfect for keeping one and gifting the other!

Ingredients -

  • 3 1/2 c. all-purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp ground Allspice
  • 1 tsp ground Cinnamon
  • 1 tsp ground Nutmeg
  • 3/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp ground Cloves
  • 1 1/3 c. Light Brown Sugar, packed
  • 3/4 c. Milk
  • 1/3 c. Canola Oil
  • 2 tsp Vanilla Extract
  • 2 large Eggs
  • 1 (15oz) can Pumpkin
  • 1/2 c. Pecans, chopped

Directions -

  • Preheat oven to 350 degrees.
  • In a large bowl, mix flour and next 7 ingredients, through Cloves, until well combined.
  • In another large bowl, mix brown sugar and next 5 ingredients, through Pumpkin, with a whisk or mixer until well incorporated.
  • Create a well in the flour mixture and slowly stir in the pumpkin mixture until well combined, but not overworked.
  • Spray 2 bread loaf pans with cooking spray and pour 1/2 bread mixture into each pan.
  • Sprinkle each loaf with 1/4 c. pecans.
  • Bake for 1 hour, or until cooked through (toothpick comes out clean when inserted into center of loaf).  Cool on a wire rack for 10 minutes before serving.
