While we're talking about meal planning, Amanda from A Few Short Cuts has 5 Freezer Meal Recipes that are amazing!!! I love freezer cooking - you can do it alone or get together with friends (use the church kitchen, if you need to) and then you have a few meals on-hand for those extra hectic days, long weeknights, and last minute change-of-plans to help you avoid dining out!!
My personal favorite of Amanda's is the Cheesy Chicken Empanadas - they look delicious!!
