Not Your Grandma's Chicken Pot Pie Recipe


This is one of our favorite comfort foods!  It is so easy to make and I usually have all of the ingredients on-hand.  What I love most is that this meal is a hit with the whole family!  I usually serve it with fresh biscuits and a salad.  I've adapted this recipe from a Kraft Foods recipe.

Ingredients
  • 1 lb. Boneless Skinless Chicken Breasts, cut into bite-size cubes
  • 2 tbsp. Italian Dressing (optional)
  • 2 c. Mixed Frozen Fegetables (carrots, corn, broccoli, green beans, etc)
  • 1 can (10-3/4 oz.) Condensed Cream of Chicken Soup
  • 1/4 lb. (4 oz.) Velveeta Cheese, cut into 1/2 inch cubes
  • 1 sheet Frozen Puff Pastry (1/2 of 17.3-oz. pkg.), thawed
  • 1 egg, lightly beaten

Instructions:

Preheat the oven to 400ºF. Coat a 9-inch square baking dish with cooking spray.

Heat a large skillet over medium heat and cook chicken in dressing for 5 minutes, or until chicken is cooked fully (165ºF internal temp). Stir in condensed soup, frozen vegetables, and Velveeta until everything is coated. Spoon mixture into prepared baking dish.

Unfold thawed puff pastry and gently place over the chicken mixture, tucking the edges under to seal. Brush the top with beaten egg. Cut 4 slits (1 inch long) into the top of puff pastry.

Place dish onto a baking sheet and onto the middle rack of the oven. Bake 30 minutes, or until crust is puffed up and golden brown. Let stand 5 minutes before serving. Enjoy!

This is a frozen puff pastry (this is the brand I buy, too). You can usually find a coupon. They're located in the frozen foods, near the frozen pie crusts, usually.
