Through MyBlogSpark, I recently had the pleasure to test out the new Good Earth dinner kits!  They generously sent me a whole dinner package including a Good Earth Mediterranean Chicken dry dinner kit, two sets of bamboo flatware, two bamboo dishes, a bamboo utility board and a 100% recyclable grocery tote.

I loved the package!!  The bamboo items are great!  I actually already own a few of the bamboo cutting boards (made by the same company) which Chris got me for Mother's Day this year!  How cool is that?!  We made the dinner kit last week and it was delicious!  I was very impressed with how flavorful the dinner was.  Because you add your own fresh chicken, the kit doesn't taste "boxy" at all.  It took a few steps, but was worth it, in the end.  My husband ate it up quickly, which means he loved it too.

I love that these kits are made with NO ARTIFICIAL FLAVORS, NO ARTIFICIAL PRESERVATIVES, NO MSG, NO TRANS FAT, and 100% WHOLE GRAINS!!  Which means that the meal was hearty and flavorful without being heavy or overly processed tasting.  I wasn't still feeling it, and tasting it, two hours later!  I felt good feeding this meal to my family, even as it came in cardboard walls.

My favorite thing about the dinner kit was that they put on the back of the box "Chef-Inspired Tips"!!  For this kit, they give you the option to replace the chicken with pork and add asparagus or artichoke hearts to to for a little "gourmet" flare!!  I love that they provided me with this option - and it sounds really good!  I was tempted to make it the "Chef-Inspired" way, but wanted to review the basic recipe for you all.

The one downside to this meal was the size of the portions.  The side of the box says that it can feed 5 people, 1 cup serving each.  That's probably true, but you will not be full.  I don't know about a lot of you out there, but when the pasta (starch) and the meat are already provided together in one dish, I like to serve a quick veggies (like a salad) and be done.  You would be starving if you did that here.  Two of us, my husband and I, finished off the ENTIRE meal with NO leftovers!!  We were quite full, and probably could have saved enough for a small lunch portion as leftovers, but even still, there just would not be enough here, in my opinion, to feed a hungry family of four (which is what I expect from a standard meal).  I'm glad that I didn't have to share it with anyone :).  So, if you make this meal, pick up two boxes, or plan to serve it with a large vegetable (or other) side dish, and probably a little dessert!
